Chocolate Chia Seed Pudding

Ingredients:

Directions to make: this is one of the easiest pudding to make, in a small jar combine cocoa powder, honey, salt and vanilla extract. Make sure to sift in the cocoa powder in order to avoid any clumps. Slowly start by adding in the almond milk or oat milk. After they are well combined add in your chia seeds, whisk them and set them in the refrigerator. You can eat them after keeping them chilled overnight or at least after 5 hours.

Baba Ghanoush (Vegan Eggplant Dip)

Ingredients:

  • 2 Eggplants
  • Tahini
  • Garlic
  • Lemon juice
  • Salt and pepper
  • Cumin
  • Garnishes
  • Arabic bread

Directions to make: This is one of the easiest dips to make. Start by roasting or baking the baba ghanoush until the top is of a little burnt black color. Once cooled down, add into a mixer to find it into a fine paste. Midway through add in a bit of tahini, garlic, lemon juice and a dash of salt and pepper. After blending you get a creamy soft dip and you can garnish them with olive oil, cumin, chili powder or pomegranate pearls. This is best served with a vegan Arabic bread.

Vegan Tofu Burger

Ingredients:

  • Firm tofu
  • All-purpose flour
  • Garlic powder
  • Black pepper
  • Canola oil
  • Soy sauce
  • Onion
  • Burger bun
  • Lettuce, tomato
  • Ketchup, mustard

Directions to make: start by draining the excess water off the tofu and add them to a bowl. Gently mash the tofu and add in the flour, garlic powder, pepper, soy souce, diced onion and oil. After well combined, gently form little patties with the mixture and set aside. You can freeze them and use it later or you can also use them right away. Fry them on medium high heat with some oil for a few minutes or until each side turns golden brown. You can put in your ketchup and mustard on your bun of choice, insert the patty and enjoy them.

Vegan Peanut Butter Cookies

Ingredients:

  • Peanut butter
  • Dessigated coconut or honey for sweetening
  • Flour
  • Almond milk
  • Baking soda
  • Vanilla
  • Salt
  • Baking soda

Directions to make: in a large bowl add in the peanut butter, honey, almond milk and vanilla extract. Stir them well before adding the flour, salt and baking soda. Once they are well combined, scoop in small balls of the dough onto a parchment paper. Flatten them out and bake for 10-15 minutes on 150-degree C. Cool them well before serving.
